You should be able to select Luxembourg from the ‘Country’ dropdown menu when setting up a new client.
I just created a new client, using a Luxembourg address to test, and received no validation errors on my end so I’m not sure what’s happened there.
Without meaning to sound like the “turn it off and back on again” rep, try logging out and back in then give it another go. Failing that, clear the cache/cookies of the browser you’re using to see if that helps.

For Sole Traders, it really depends on how you’re using Crunch, however, it’s worth noting that an invoice is a legal document and you should always try to display the correct address on it.
With that being said, you can consider the following:
If you’re purely using Crunch for bookkeeping purposes, i.e not sending out invoices to clients/customers but simply for recording your services and payments received, then the address in some ways doesn’t need to be an exact match. Be sure to get something as close as possible though because, as mentioned above, do bear in mind that these are still legal documents.
If you’re using Crunch to raise, issue and email invoices directly to your clients/customers, then you absolutely need to get the exact address reflected on that invoice. As above, remember that they’re legal documents and you wouldn’t want to end up in a situation where you client/customer doesn’t pay you because the address isn’t correct.
